Located in the heart of Zadar’s historic centre, Labrax is a modern fish & wine bar built on the idea of simplicity, precision and respect for ingredients.

Led by chef Saša Began — awarded by Gault&Millau as one of the “Great Chefs of Tomorrow” — the kitchen focuses on contemporary interpretations of Mediterranean cuisine, where technique meets intuition.

Our menu is driven by fresh, local seafood, but never follows the expected path. Each dish is designed to balance flavour, texture and detail — often combining elements you wouldn’t normally expect, yet instantly understand.

Paired with a carefully selected wine list, Labrax offers more than just dining — it’s an experience shaped by rhythm, atmosphere and the small details that make the difference.

We now have a new dry ager dedicated to the aging of sea bass.

This advanced dry-aging process allows the fish to develop a deeper, more refined flavor profile while enhancing its natural texture. Carefully controlled temperature, humidity, and airflow create the ideal conditions for maturation, resulting in a richer taste and a uniquely tender bite.

Restaurant Zrno Soli in Split is one of the best in Croatia, known for its outstanding Mediterranean cuisine and fresh local ingredients.

For our Kitchen TAKE OVER, we hosted two renowned chefs from Zrno Soli: Marko Đurašević, Chef of the Year according to Gault&Millau Croatia 2024, with his rich international experience and passion for Mediterranean flavors, and Branimir Prnjak, a young and creative chef who continuously pushes the boundaries of what Mediterranean cuisine can offer through his innovative approach.

"Pflicht in Zadar wenn man sich gerne was Gutes tut. Juni 2025 Ein beeindruckendes Erlebnis. Wir haben das 5 Gänge Degustationsmenü gewählt und es war wirklich toll. Der erste Gang, darüber wird man in Zadar sprechen Langustencarpaccio, gänseleber-mega Kombination. Danach amberjack tartar elegant. Herrliche lagustinen carneloni und ein wellington mit angeräucherten thunfisch statt beef. Als dessert tolle pana cotta mit viel fluffy creme. Super tolles Brüderpaar die es leiten und ein sehr kompetenter Kellner. Alles in allem 5 von 5."
